Y’ALL. I have discovered a bubbly that has me professing my undying love!
So listen: THE very 1st sip of this Ulysse Collin ‘Les Maillons’ Blanc de Noirs Extra Brut made me audibly utter “Ooh yes, baby!” before I could catch myself.
This is one of those make you wanna slap your mama, lip smacking , eyes rolling into the back of your head kind of champagnes.
And no, I am not exaggerating. Although if I’d actually slapped my mama I would already be dead and my Spirit would be typing this caption. But I digress.
One of the things that makes this wine so special is that the fermentation happens in oak (Vigneron Olivier Collin worked as an intern with Jacques Selosse and was inspired by Selosse’s winemaking style). Wines fermented this way tend to be more aromatic, creamier, and richer.

The nose is layered and complex and elegantly finessed with aromas of honeysuckle flowers, dried cranberries, and citrus. A second sniff served up red cherries and baking spices capped off with smoky maple-ish-ness notes. I was immediately intrigued.
A first sip revealed passionate acidity—like, it was seriously having a full-on make out session with my tastebuds—followed by flavors of red cherries,
crisp red apples,
toasty and nutty notes, lime and, finally,
the tart core of a pineapple.
The finish was deep, long, and powerful…just like a lover’s kiss.
Is it possible to have an affair with a bottle of wine? Cause if it is, the hubs just miiiight be in trouble…HA!
This #champagne rings in around $100-$110 dollars, but it is worth every freakin’ cent. In short, if you find @champagneulyssecollin don’t think—just BUY IT.
